Ingredients

  • 200g of spaghetti

  • 100g of pancetta

  • 2 large eggs

  • 50g of grated Parmesan cheese

  • Salt to taste

  • Black pepper to taste

Directions

  • Cook the spaghetti in salted boiling water according to package instructions until al dente.
  • While the spaghetti cooks, heat a frying pan over medium heat and add the pancetta.
  • Fry the pancetta until crispy and golden brown. Remove from heat and set aside.
  • In a bowl, whisk together the eggs and grated Parmesan cheese until combined.
  • Once the spaghetti is cooked, reserve some pasta water and drain the rest in a colander.
  • Add the hot spaghetti to the frying pan with pancetta and combine well.
  • Remove from the heat and quickly pour the egg and cheese mixture into the pasta, stirring vigorously to create a creamy sauce. If it's too thick, add a little reserved pasta water to loosen it.
  • Season with salt and freshly ground black pepper before serving.
